Honing a "big eddy" (non-symmetrical) fillet knife
So I have a new Kommer's Big Eddy fillet knife from CRKT. It's an inexpensive knife but I like it so far. Question on the honing is: I'm a Lansky user. This knife has a hollow-grind on the right side, and this right side has an apparent minor grind to the edge. The left side is flat-ground, and has an apparent grind that about matches th3 30-degree setting on the Lansky. This would indicate to me that since this is a fillet knife (typically maybe a 17 to 25 degree hone), there should be an angle on the flat side too.
Anyone sharpened one of these before or have any advice?

Disappointingly, the reply I got from CRKT is to hone only one side... the person seemed to cut-and-paste from the knife description than really understanding what I was asking. There is a clear grind, albeit a very narrow one, on the hollow-ground side.

I use a Lansky kit to sharpen my tree grafting knife but that's simply one sided...
I'd call the folks at Lansky, I bet they will offer some advice. Otherwise, try http://www.bladeforums.com/

When doing a lot of fur handling, I used this to sharpen my skinning knives. Just bolt it to your bench and pull your knive through about 5-7 times and your done.

I use it for my filet knives as well. Now, I only use my lansky for sharpening my Gerber Gators.
