When harvesting the honey comb. Do you remove all the comb at the bar or do you just cut it off and leave a little comb on the bar?

If you are doing foundationless then you should leave some for them to use as a guide to build another comb.
Otherwise you would be using the thin surplus foundation for cut comb and replace the whole thing.

I always leave a thin strip up under the top bar and put back in the hive, they redraw it out real quick that way. I'm using langstroth hives, but TBH should be the same for this.

I would cut it straight across below the guide. If there is no guide (and there should be) then leave the top row of cells.
