I wonder if this would work as a pollen dryer.

I'm no expert, but I don't see why not. You'd need secondary trays that pollen wouldn't fall through, and that might reduce air circulation, though.

I always heard to do it in the freezer, just leave uncovered and dump back and forth between canning jars for a few days.

That dehydrator you linked to heats up to 175 degrees F. Will heating pollen damage it or will the pollen be fine if heated up?
