I have never made any but would like to try this spring. I was wanting to try a batch with orange and a batch with blueberries. Do the fruits need to be dried before blending to prevent fermentation? If not, I would assume you have to keep it in the refrigerator which will then make it awfully hard. Please advise. I am new at this.

You need to use dried fruit. I use freeze dried fruit powder, it lets you have a nice creamy texture. If you have your own fruit you should be able to dry it then grind it to a powder as fine as flour. On most flavors I use 1# fruit to 60# honey and 5-10% starter seed. I get most of my fruit from www.heartlandhoney.com.

I make several different fruit flavored creamed honeys. Thought I would add dried fruit to make them better. Used blackberry, strawberry and raspberry. I don't think the chunks of dried fruit made the creamed honey any better than just flavoring it and they were sure harder to work with that way. I just use lorann flavor oils for the fruit flavored honey and I can't keep enough of it on hand.

I prefer using dried natural powders versus the artifcal oils.

I think I will try the powders. I also don't like the idea of using the flavored oils but started making flavored honey and can't stop because of customer requests. Where do you get your powders from?
