i am extracting by hand for the very first time tonight, and a fair amount of water got into a bunch by accident.
is there anything i can do to save the bunch?
and can i be confident that, once done, the honey won't rot & spoil?

feed the watery honey back to the bees and let them get the moisture out. good luck,mike

Probably too late for an answer, but here goes anyway.
Assuming that the honey was in a bucket, pan, or jar of some kind.... The water is lighter than honey and will float on the top and be slowly absorbed. So, put several layers of paper towels on top, soak up 99% of the water and remove (now sticky) towels. What's left can be stirred into the honey without concern (except consience).
A refractometer may now seem like a reasonable possesion to have.
