A friend gave me a 6 pointer yesterday. First one this season. Bow season came in last Saturday. Jerky is in the dryer now.

:no:Iddee Being a redneck myself I sure dont want to see you risk your life. So here goes. Bizz hold our beer and watch this:thumbsup: You need to send all the jerky over this way so bullseye and I can taste test it to make sure it is properly processed for redneck consumption. I know we may be risking life and limb to do this but its the least a fellow redneck can do.:applause:

Sorry, RR, but any mention of sending it away from this bunch of rednecks would be instantly fatal to me.
Dragonfly, and any others interested.
1 cup soy sauce
1 cup worcestershire sauce
4 tablespoon catchup
4 tablespoon honey
1 teaspoon ground red pepper, or to taste
1 teaspoon garlic powder
1 teaspoon onion salt
2 teaspoon salt
Marinate 24 hours in frig.
Dry at 135 to 145 F. until consistency desired is obtained. Limber should be stored in frig. Totally dry will keep on shelf or in hunting coat pocket.

You guys in NC still killing those tiny baby deers...come out west where the deer and elk are so big we only count antler size by how many points are on one side. :D

Can you dry the jerky in an oven idee.
And alpha6 are you saying to come up on your property and go for a hunt, i got an 8 point last year. But would like a real trophy to mount. Are youth hunt starts saturday and sunday.

JordanM, yes, if you can keep the temp below 150. Some leave the door slightly open to let the moisture out.
Alpha6, We go to florida and kill a couple of the poodle size deer, then when we return home, these deer seem big. :thumbsup: :p

After reading the list of ingredients, I doubt it meets the criteria for a heart healthy diet. More the reason to give it a try.;)

Hey idee,
I got the jerky marinating right now and it has been 24 hours and i didnt get to it today, will it still be good if i leave it marinate an extra day?
About how long does it take to dry in an oven?

If it's refrigerated, it will be fine.
Dry it until it is as you like it.
Some like it totally dry and hard. It will keep that way without refrigeration for a year.
I like mine limber, about 12 hours in the dehydrator. It will keep for a week or two without refrig.
It never lasts any longer than that around these rednecks.
Idee, Talked to the old man the other day and he got himself an Excaliber dehydrator and also a meat slicer. You Randleman guys must really like jerky down there?
Oh yeah, I guess I do too!!! Thank you for the recipe. I might add a little HOT to mine. Keeps me warm on them cold November hunts!!!
Good luck this season. Hope it cools down for you to hang them outside?
Alpha, I've been out here for over 10 years and still size my racks "Colorado Style" these Mo. boys here never understand why I do it!!! habbit I guess? Good luck up in the snow country.

Got him in the oven right now.
I used the inner loanes and i had to taste a little bite and it is pretty good, maybe a little to much salt but still taste good.

I use the outer loins.
The salt will cook out and the honey will give it a flavor you will never forget.

Its all done now and it taste Amesome. Only took about 4 hrs. on 180 in the oven.

No really Miss Jones...I was just sitting here watching my bees and the next thing I know this huge buck started attacking me...good thing I keep this .308 handy in case wasps try and get my bees or it would have done me in. :D

Exactly my thought iddee, the ban is against firearms not bows right?
After i got done marinating the jerky i through some venison in the marinade to and am going to try jerky venison in the frying pan.

Jeez Jeffrey, I'd have thunk firearms were required there in Buda! They pretty much are at my friend's place in Kyle anyway.
