This is honey that I left in a bucket in the kitchen. It appears to me that it dried before it had a chance to crystalize. I've had some crystalize in airtight containers, and the bucket was covered to keep out dust but it's not airtight. It tastes fine, no gritty feel, and of course no fermentation. You can see the "high water mark" above the gate that indicates the amount of moisture evaporated.

You must have some awefully low humidity around there. Honey would never do that here.

I'm not saying that it hasn't dehydrated, but it also looks like it is crystallized (spun) very fine. If it gets a bit runnier when you stir it, then I think that would be likely.

Also, being <20% water to start out with you shouldn't see much of a "high water mark".

That does make it taste good though!!
