When do bees prefer Nector, Pollan and Honey?

How are these 3 made and used by the bees? Also, as the honey flow begins to dry up, least till this fall, which will the bees depend on as food source?

The prefer all three when it's warm enough to fly. :) They will collect all nectar and pollen every time it's available and it's warm enough to fly.

They need nectar to make honey to get through the winter and to raise brood. They need pollen to raise brood. They store pollen overwinter to raise brood in late winter. A good supply of pollen in the hive helps a lot with buildup the next spring.
