Mine do and I think it's very nice honey. I've never not had someone rave about the taste. But then they never get REAL unheated coarsely filtered honey. I don't think there's anything real distinctive about the taste, it's just very nice.

I'm sure that there are others that are much more qualified to answer this question, but I can give you my observations. I live in rural neighborhood that is surronded by several large farms. These farms rotate their crops, usually cotton, soybeans, and (sometimes) corn. The soybean years produce very very little honey, the cotton does well very for me. It could be related to the type of soybean (again, I'm not a farmer), or perhaps our local climate.

Usually when they get about 10-12" tall, continuing until late summer.

i have had my bees make " soybean honey"
it is a little bit different tasting
but it will sugar rather quickly .
