It was 65 degrees today and I had 3 supers full of fall honey still in the garage. The fall crop surprised me and I was not prepared nor did I have the time to extract it. I just knew that it had either crystalized or fermented, but it turned out to be just fine. It was very dark but had a good taste. It was good to do something related to beekeeping during this winter down time. Has anyone else let honey sit this long before extracting it and had success with it?

I have sometimes waited months, but sometimes the moths take advantage. I've seldom had much problems with crystalizing that soon, but a few varietals I'm sure would.

I have three supers on the floor and five in the freezer. It hasn't crystalized yet either, I checked just last week. I thought it would have by now, I was going to save it for emergency feed late in the spring or just to have fresh honey for sale.
