Is there any rating on the most premium of honeys. I have noticed the clover price is really droping. I know in the UK Heather honey is the best. Has anyone ever put together a list of the best honeys to produce for premium prices. I am concerned the price of clover may continue to fall to very low levels.

well, I'll name the easy ones

I know of:
Sourwood
Tupelo

are premium honeys...

I guess stuff like buckwheat honey is probably pricier as well

Any of the named honeys bring a higher price. Poplar, blackberry, and sourwood are our best. Some people with pay good golden rod(these same people would proply like buckwheat as it is a dark stronger honey). I myself do not like clover honey(to mild for me). Sourwood is our highest priced honey.
