I know what I want when I buy a nuc hive. I think I know what most people want when they are buying nuc hives. But, is there any documentation on how a nuc should be made upÂ…i.e. 3 frames bees and brood, one frame brood pollen and bees, one frame honey and bees.

I think this is one of those "truth in advertising" issues that have been discussed in other threads. I have seen quite a range of what people sell as a "nuc". There's a corresponding range of prices. My advice would be to obtain very specific information from potential vendors about exactly what's inside the box in terms of number of frames and what's on them.

From a newbee what would bee the preferred make-up for a 3 frame and a 5 frame nuc?

I buy 4 frame nucs...just picked up 20 last Monday as a matter of fact.
I get 3 frames of brood, a frame of feed, and the box topped off with bees. These were Carniolans and were 48 each. If I had gotten 50 or more they would have been 44.
Also got 15 Carniolan clipped, marked queens for 10 ea.
