Is anyone aware of any honey processing sanitation guides that are available on the net? I will be taking my extractor etc to a licensed kitchen attached to a farm market where I will extract and bottle.

I've always washed my extractor down with lots of hot water and joy dishwashing detergent - is this adequate when processing commercially? I'm guessing I have 200+ lbs to extract.

Also, do I need to do anything with my containers prior to filling them with honey? They are new (pete plastic) and look clean to my eye.

Not sure about the extractor but when I worked for a juice bottling co. it was health code to wash or blow (compressed air) the plastic bottles out.This would ensure there was no dust or particles in them.
Who knows how long they have been on that warehouse shelf before they were shipped to you,and all warehouse's have some type of pest in them (mice,roach,people).May be best to bottle behind closed doors,there's always at least one in the crowd that's not gonna like the way you are doing it..(if you do it in the open farmers market.)
