I noticed in my supers that not all the frames are capped. I've heard you should not extract these due to fermenting problems. #1. is this true? #2. Can you add a small amount to your honey without having problems(ie, what ratio is acceptable). Steve

I think it may depend on your climate. In a wet climate it may be a more complex issue. Here, if it's 80% capped I have no problems.
Bjerm2's system is to shake it and see if you can shake it out. If you can't don't bother taking it. If not, it's probaly ripe.

My question is do you really need to take this unripe honey away from the bees? It still does not have the full flavor of good ripe honey. Let the bees take care of it.

I am new to this board but would like to add something. I extracted in June with about 75% - 80% capped at 17% moisture. Then in August 100% capped at 20% moisture. What is the deal?

Different honey's have different 'thicknesses'. It depends on the source and that is why some honeys crystalize quicker than others. Sometimes the bees try to 'pack it in' before it really is all ripe. This is normal.
