How about it?
Willing participants wanting to sample differing flavors of honey from around the country contact each other and exchange a fixed amount, postage paid by each participant.
I'm thinking a clean 8oz mason jar with a fresh lid filled with your best. What do you think?
Why not? Folks collect wine, spices, etc and as honey is so variable I think it might be fun.

I'll start - I have a medium golden honey from the mid Willamette valley here in Oregon (that would be the wet side of the state.. for those who don't know) that was harvested July 30, 2006. The valley (250' elevation) has highly productive soil, ample rain, and moderate temps so produces quite a variety of flowering plants. This honey then is a mix of summer's finest!

I also have a limited amount of honey harvested last night from Bend, Oregon (and that would be the dry side of the state at ~4000' elevation). It is very light and delicious. I 'think' this is what a lot of folks refer to as 'sage honey' even though, if I am right, that is a misnomer. Bend, though desert-like, has very limited wild sage. The vastly predominant flowering plant is rabbitbrush.. at times the entire desert is yellow with its blooms. This honey is pure rabbitbrush.

Any takers? What do you have to offer?

Longarm -
I'll bite.
My favorite of all the honeys I've got is what I call "Ruby Red" - looks brown sitting on the counter but when you hold it up to the light it is red red red. Summer flowers of Maine - thistle, mints, echinacea, red clover, etc.
Mine is in 8oz squeeze jar - lighter than glass but easy on the kitchen and less waste on the spoon.
